From Adissan to Bessan, from the first buttresses of Cévannes up to the Mediterranean Sea, the vineyards have gently carpeted this natural amphitheatre, through which the Hérault river meanders. In this predominantly wine-growing region, the road winds towards villages that have been there since the Middle Ages, sheltered by their church or castle. Montagnac, Caux, Nizas, Saint-Pons de Mauchiens, Saint-Thibéry… Escape to the villages to discover heritage treasures, markets or traditional festivals led by their "animaux totémiques" (an animal that represents the village). Our vineyard, planted in the Classical era by the Ancient Greeks, and developed by the Romans, is situated in the heart of the largest wine-growing region in France. Its incredible geological diversity includes volcanic, sandstone, limestone, sandy and shingle soils. As you get closer to the sea, the heath is gradually replaced by flat vineyards.

There are 3 Protected Designations of Origin, and 5 Protected Geographical Indications, demonstrating this area's importance. Make a beeline for Adissan to taste its Clairette de Languedoc, or head to Castelnau-de-Guers, Florensac, Montagnac, Pomérols or Pinet, to sample their famous Picpoul, a dry white wine: lively, floral or fruity, it is recognisable by an acidic edge that marries perfectly with shellfish from the Thau.
Wine leads us naturally towards other iconic local produce, such as figs from Nézignan-l'Evêque, sweet onions from Lézignan-la-Cèbe and olives from Bessan, all of which are inseparable from the good regional tables. And this little culinary taster must pay tribute to the delicious specialities of Pézenas, such as "petit pâtés" and boiled sweets.
